Gravy is one of the most important things on a roast dinner or a shepherd's pie, but it can also be one of the most hassle-free things to make at home. It takes little more than a few minutes to prepare, and it will keep for days in your fridge.

What is gravy, you ask? It's a thick, meaty sauce that is mostly made up of starch and flavoured with cooked meats or vegetables. When cooked, the starches will thicken the sauce — making it richer and more concentrated. It can be served cold or hot, and is always a hit with children and guests of all ages.

Making gravy is fairly straightforward once you have mastered the basic technique. The most important thing to do is cook the meats and/or vegetables that you are using in the recipe, which will go a long way to improving the flavour. When you are done, use a slotted spoon to remove the meat from the pot. It is advisable to let the juices escape while you are picking the meat off the bone, as this will help reduce the amount of “wet” juices that could potentially curdle the starch in the sauce.

Once your meat has cooled down, you can start to make your gravy. Simply whisk together some flour and a bit of water in a small bowl until smooth. You can also add some cooking liquid from the pot if you are using it, though this is not necessary. Give the mixture a little while to thicken, and then add seasoning to taste. If it is still a bit thin, whisk in a bit more flour, or if it is too thick, stir in a touch more water.

Another great thing about gravy is that it is very easy to make and easy to store. It has enough substance that you can store it in the fridge for up to three days without it going bad, and it also reheats well. This means that you can pull it out and use it whenever you want during those three days — perfect for when you are unexpectedly woken in the middle of the night for a family dinner!
